Mama’s Banana Walnut Pancakes

Mama’s Day, or any other day, these fluffy flapjacks are a hit!

 

 

 

 

 

 

 

 

Serves 6

Whisk together 2 cups all-purpose flour, 2 teaspoons baking powder, 1 teaspoon baking soda, 1/2 teaspoon salt, and 3 tablespoons sugar.  In a separate bowl, crack 2 eggs and lightly beat.  Add 3 cups buttermilk (regular milk is OK too) and 4 tablespoons of melted butter.  Whisk to combine.  Add the egg mixture to the flour mixture, and mix until combined.  Slice yourself up some bananas.  Get a griddle or large cast iron pan good and hot, then add a small pat of butter to coat the entire pan.  Be careful that the pan isn’t too hot though so the butter doesn’t burn!  As soon as pan is hot and buttered, ladle large dollops of batter into the pan keeping each pancake about 2 inches apart.  Once they start to bubble, place the sliced bananas gently into the top uncooked side and then flip.  Cook until golden brown.  Top with fresh bananas and walnuts.  Enjoy!

Mama’s Special Touch:  Don’t overmix your batter.  For fluffier pancakes, there should be little unmixed lumps of flour.  Top your pancakes with more sliced bananas, maple syrup and Mama’s Nuts! Garam Masala Walnuts.  Enjoy!
