Mama’s Moroccan Rice Pilaf
The fresh herbs and warm spices in this lovely and exotic rice dish will take your taste buds on a magic carpet ride!
In a shallow pan with a tight fitting lid, add one glug of good olive oil over heat. Add 1 cup of basmati rice and toast til lightly golden. Add one clove of chopped garlic, one spoon of chopped fresh ginger, and one small chopped onion. Mix around briefly until onions soften. Add 2 C of homemade chicken broth, 1/3 C chopped apricots, a healthy pinch of salt, and a few grinds of black pepper. Cover pan and bring to a boil, reduce heat and cook over low heat for 15 minutes. Don’t Mess With It! Uncover after 15 minutes, fluff with a fork and sprinkle with fresh chopped cilantro and/or parsley.
