Mama’s Spanish Green Bean Salad
This refreshing side dish can be made ahead of time and served at room temperature.
Steam or blanch 1 lb of cleaned green beans and cool quickly. Slice thin 1/2 of a red onion and 1 whole red pepper. Place onion, beans and peppers in a medium-sized bowl and dress with a healthy dose of red wine vinegar, olive oil and the juice and zest of an orange. Season with a few big pinches of salt and pepper. Toss to coat and let marinate for an hour or longer.
Mama’s Special Touch: Add oil-cured olives and/or my Smoked Paprika Almonds for character and crunch!
